<p>Just my opinion!! If you try and think differently let me know.</p>
<p>2-1/2 c. flaked coconut</p>
<p>1/3 c. butter, melted</p>
<p>3 c. milk</p>
<p>2 pkg. instant pistachio pudding mix</p>
<p>1 1/2 c. whipped topping or cream</p>
<p>Spread the coconut in a shallow pan and place in 350 degree oven for 10-15 minutes until slightly brown. Stir every few minutes and watch closely. Set 1/4 c. aside.</p>
<p>In a small bowl, combine toasted coconut and butter. Press into a pie tin. Refrigerate for 30 minutes until firm.</p>
<p>Whisk milk and puddings for 2 minutes, remove 1/2 c. of this mixture and set aside. Fold in 1/2 c. whipped topping to the puddings. Spread over crust.</p>
<p>Fold the remaining pudding into the 1 cup whipped topping. Spread over pie.</p>
<p>Sprinkle the remaining toasted coconut over the pie. Refrigerate for 2 hours.</p>

1 1/2 C whole wheat flour<br />
1 1/2 C coconut, shred or flake<br />
1/2 tsp. salt (opt)<br />
1 1/4 C honey<br />
1/3 C cooking oil<br />
2 tsp. vanilla</p>
<p>Combine honey, oil and vanilla. In a large bowl combine grains, flour, salt, and coconut. Mix two bowls together. Spread on a lightly oiled cookie sheet. Bake at 300 degrees for 20 min, stirring occasionally while baking. After baking, add any or all of the following ingredients:<br />
1/2 C sunflower seeds<br />
1/2 C almond pieces<br />
1/2 C sesame seeds.</p>
<p>Store in airtight container</p>
<p>Another one</p>
<p>Granola<br />
6 c rolled oats<br />
1/2 c wheat germ<br />
1/2 c honey<br />
1/4 c vegetable oil</p>
<p>Variations add:<br />
raisins<br />
chopped raw nuts<br />
bran<br />
coconut<br />
raw sunflower seeds<br />
chopped dried fruit</p>
<p>Preheat oven to 300 degrees. In bowl mix oats, wheat germ and nut/bran products (anything that can be cooked). In small saucepan heat honey and oil until thin. Blend with oat mixture, stirring to coat evenly. Spread granola evenly and not too heavy on baking sheet and bake until golden brown, approx 15-20 mins. Bake the granola in batches. Add raisins and dried fruit after baking. Cool and store in airtight container (we use gallon ziplocks). Makes a great cereal or topping for yogurt.</p>

<div style="text-align: left;">1/2 c. shortening</div>
<div style="text-align: left;">2-3 c. buttermilk (put in 2 to start with and then add a little more if you need some)</div>
<div style="text-align: left;">Mix all the dry ingredient together then cut in shortening. Add buttermilk. Mix with your hands (or a large wooden spoon if you prefer not to get your hands dirty), kneading the dough as you go. Let sit for 5 minutes, then form dough into balls just a little bit larger than a walnut . Let balls rest for 5 minutes. Heat a skillet or griddle. Roll balls out into a thin tortilla. Place shell in the hot skillet, turn when the shell starts to bubble. Place cooked shell on a plate and serve with your favorite toppings. </div>

The cookbook was by Jessica Seinfield. All the recipes had pureed vegetables in them. I want to incorporate more cooking like this. I will be adding another tag for this category.</p>
